A versatile sauce that can be used in a variety of ways including on Mediterranean vegetable
pasta, Chilli chicken casserole and Beef bolognaise. If you don't use it all, it can easily be frozen, ready to use another day.
Prep Time: 30 mins
Ingredients
4 tins chopped tomatoes
8 garlic cloves, crushed
2 red or white onions, chopped
3 tbsp dried mixed herbs or fresh herbs
2 pinches black pepper
1 tbsp olive oil

Method
1. Heat the oil in a heavy based wok/frying pan over a med heat
2. Gently fry the onion and the garlic in the oil over a medium heat, fry until soft and glassy (about 2 mins)
4. Add the mixed herbs and black pepper
5. Allow to cook for about 5 minutes until sauce had reduced and is rich in flavour
