You know we’re all about reducing food waste, which is why our kitchen manager Sarah has been busy coming up with new ways to use the parts of food that don’t get eaten. Most of us don’t give a second thought to coffee grounds but what if we told you, you can cook with them! This genius recipe uses what had been a coffee bean into delicious brownies.

Ingredients
175g Butter
175g Chocolate
250g Sugar
50g Used Coffee Grounds
3 Eggs, beaten
1 tsp Vanilla Essence
Pinch of Salt
115g Self-raising Flour
Equipment
Baking Tin (10 x 8 inch)
Greaseproof Paper
Saucepan
Method
- Preheat your oven to 150°C. Grease and line a 10 x 8 inch baking tin with greaseproof paper.
- Melt the butter and chocolate in a saucepan over a low heat, stirring continuously.
- Remove from the heat and stir in the sugar, ground coffee beans, eggs, vanilla essance and salt.
- Carefully fold in the flour until it is evenly mixed in.
- Transfer the mixture to the prepared tin and bake for 35 - 45 minutes or until risen and the surface is starting to crack. Transfer to a wire rack to cool.
