Preserved Lemons in Salt

Preserving food allows you to enjoy its fresh flavours and high nutritional value throughout autumn and winter, while reducing waste and stocking up on healthy, long-lasting ingredients.

Prep Time: 20 minutes

Ingredients

1 lemon 

30g salt 

Method

  1. Thoroughly wash your lemons and dry completely. 
  2. Slice the top and bottom of the lemon off. 
  3. Chop into four segments lengthways 
  4. In a bowl cover the lemons with salt. Leaving a tbsp salt remaining. 
  5. In your sanitized jar, pack will lemons leaving space at the top. 
  6. With a spoon, press the lemons down so they release some of their juices. 
  7. Top the jar off with the remaining salt so all lemons are covered.
